Pancakes for Dinner

So I like pancakes a lot. I mean a WHOLE LOT. And the truth is, I haven't really had them since I was a kid. AHHH Why the Heck not???? Well I have solved the pancake problem, and am now a pancake pro. Slinging hotcakes at least once a week (last week it was 3 times). Tonight, I decided our love of pancakes was going to extend beyond the morning hours and into whenever we wanted, which means pancakes for dinner! WHY?  Because we can!!! YUM!

Super Pancakes Recipe::

1 1/2 cup flour (whole wheat or gf option)
2 Tablespoons Flax Seed Meal
1/2 Tablespoon Maca Powder
1 Teaspoon Cinnamon
1/2 Teaspoon Salt
2 Teaspoons Baking Powder

1 1/4 cup Water ( add more if its too thick)
1 Tablespoon Oil
2 Tablespoons Honey ( or other natural sweetener) 

Cook in a hot skillet with a bit of coconut oil, flip when the bubbles are everywhere, and then until light brown. We like to eat ours with peanut butter and organic 100% pure maple syrup!  Add some fruit too it!!!! Bananas are awesome, berries are tasty too!

You can even make pancakes savory with herbs and spices!!! I think i'll save that for another post!
