Seasonal Connections :: A Guest Blog Series

Autumn is my most favorite season of all. I love the crisp air, fall foliage, and the thrill of new beginnings. The trees begin releasing what no longer serves them, and it’s time for us to follow suit. The changing of seasons is the perfect time to reflect on the one just passed and to learn how to tweak habits so that we are optimizing our health and total wellness- inside and out.

 

Fall offers the perfect opportunity to refresh as well as transition into seasonal eating. With the cooler temperatures, fall produce is rich in squash, pears and apples, making even the biggest fans of summer crave the warmth of homemade soup and spiced teas. This is one way Mother Nature speaks to us and tells us it’s time to slow down and come back to our center.

 

But I know in the current days of constant busyness, fall can be fickle. While your body is craving warmth and grounding to cleanse and heal from summer, schedules are now full of fall festivals, back-to school obligations, and weekends packed with outdoor activities. Slowing down may seem unreasonable but it is possible to give into nature by choosing in-season produce and finding ways to prepare it to fit into your busy schedule. This caramelized acorn squash takes only a few minutes to prep and can be left to roast while you check items off of your to-do list. It pairs perfectly as a side for dinner or leftover cold on some greens with pumpkin seeds and dried cranberries. I encourage you to experiment with falls bounty and reap the rewards of eating seasonally. Enjoy!

Caramelized Acorn Squash

Ingredients:

1 tsp thyme

1 tsp rosemary

2 tsp maple syrup

1 tablespoon melted coconut oil

salt and pepper to taste

acorn squash

Directions:

Preheat oven to 350*. Cut off ends of acorn squash and cut into wedges. In a large mixing bowl, pour melted coconut oil and maple syrup over squash. Stir to coat. Season with thyme, rosemary and salt and pepper, stir again to coat evenly. Lay squash slices in one layer on baking sheet and pour remaining liquid from mixing bowl over squash. Bake for 25 min (flipping once halfway through) or until browned and tender.
